Fairmont Hotels & Resorts will open its fourth UK property, Fairmont Cheshire The Mere, on 10 July 2026, and reservations are live now. Set across a 157-acre estate in the Cheshire countryside, with views over The Mere Lake, the hotel marks the brand’s first luxury countryside estate in Northwest England and joins a UK collection that already includes The Savoy, Fairmont Windsor Park and Fairmont St Andrews.

The arrival is the result of a substantial commitment by Select Group, which invested a combined £125m to bring the estate into the Fairmont fold — £35m for the acquisition and a further £90m for its transformation. That scale of spend signals an intent to position the property as a destination in its own right rather than a refit, and it underpins everything from the guest rooms to the grounds.

The estate itself carries genuine historical weight. The Mere’s history dates to the Domesday Book of 1086, and it has operated in more recent times as a leisure estate and private club. The conversion preserves that lineage while reorienting the property around the standards a discerning traveller would expect from the Fairmont name.

Accommodation comprises 116 bedrooms, including 23 suites, arranged to take advantage of the lakeside setting. Dining is anchored by Gordon Ramsay at The Mere, bringing one of the country’s most recognisable culinary names to the estate. Alongside it, The Orangery will serve afternoon tea, and The Club Lounge offers a quieter setting for guests. The pairing of a signature restaurant with a more relaxed lounge and a dedicated afternoon-tea room gives the property the range expected of a full country-estate stay.

Wellness is handled by the Fairmont Spa, which draws its inspiration from the lake and is designed around what the brand describes as elevated wellness experiences, including a Spa Bar. Golfers, meanwhile, have an 18-hole championship course on site — a meaningful draw in a region long associated with the game, and a reason in itself to plan an extended stay.

The estate is also being positioned for events and celebrations. The Grand Ballroom spans 1,000 sq m and can host up to 1,000 guests for weddings, conferences and gatherings, while four dedicated boardrooms with landscape views are available for meetings or private dining.
