Hyatt’s Luxury Push in Mexico: Park Hyatt Riviera Maya and Polanco Ahead
Park Hyatt adds an all-inclusive resort on the Riviera Maya and a Polanco hotel, with Alila Mayakoba now open and Impression Isla Mujeres joining The Unbound Collection.
Hyatt has set out its luxury plans for the Americas as 2026 enters its final quarter, and Mexico sits at the centre of them. Park Hyatt Riviera Maya is expected to open by the end of the year as the world’s first all-inclusive Park Hyatt, Park Hyatt Mexico City Polanco is due to follow in spring 2027, and two further resorts, Alila Mayakoba and Impression Isla Mujeres, widen the group’s choice of places to stay.
The company describes this as a concentrated period of luxury growth, led by Park Hyatt in Mexico and by The Unbound Collection by Hyatt. For travellers, the practical effect is a broader set of Hyatt addresses across the country and the wider region: some can be booked today, and others are worth pencilling into plans for the coming seasons.

Park Hyatt’s presence in Mexico began with Park Hyatt Cabo del Sol, which opened in December 2025 as the brand’s first Mexican hotel. It stands on the coast of Baja California Sur, and Hyatt characterises it through contemporary Mexican architecture, oceanfront dining and a wellness offering shaped by the surrounding landscape. It is the established point of reference for what the brand intends to do elsewhere in the country.
The second property is the one that breaks new ground for the brand. Park Hyatt Riviera Maya is expected to open by the end of 2026 and is billed as the world’s first all-inclusive Park Hyatt. Hyatt says the resort is built around choice and discretion, and two details stand out for anyone weighing it against the region’s existing all-inclusive resorts. Stays begin with personalised pre-arrival planning, and dining is entirely à la carte, so every meal is ordered from a menu. Both points indicate how Park Hyatt means to interpret a format it has never offered before.

Park Hyatt Mexico City Polanco completes the trio. It is expected to welcome its first guests in spring 2027, with 155 rooms and suites on Campos Elíseos, overlooking Chapultepec Park. Once it opens, the brand will have a base in the capital alongside its two coastal resorts, which makes a three-part Mexico itinerary possible within a single brand: a few days in Mexico City paired with a stay on the Pacific or the Caribbean coast.
The Essentials
- Park Hyatt Riviera Maya
- Expected to open by the end of 2026; the world’s first all-inclusive Park Hyatt, with personalised pre-arrival planning and entirely à la carte dining
- Park Hyatt Mexico City Polanco
- Expected to welcome its first guests in spring 2027; 155 rooms and suites on Campos Elíseos, overlooking Chapultepec Park
- Park Hyatt Cabo del Sol
- Opened December 2025 as the brand’s first Mexican hotel, on the coast of Baja California Sur
- Impression Isla Mujeres
- Joins The Unbound Collection by Hyatt on 2 November 2026; adults-only, all-inclusive, with suite-led accommodations and butler service
- Alila Mayakoba
- Open since February 2026; 60-acre Riviera Maya resort with 182 guestrooms, suites and villas, six dining destinations and Alila Spa
On the Riviera Maya, Alila Mayakoba is already receiving guests. The resort opened in February 2026 on a 60-acre site, with 182 guestrooms, suites and villas, six dining destinations and an Alila Spa, together with a wellbeing programme developed with local practitioners. Hyatt has also announced that from 1 October four Alila hotels in the Americas join Erewhon’s Member Lifestyle Collective: Alila Mayakoba, Alila Ventana Big Sur, Alila Napa Valley and Alila Marea Beach Resort Encinitas.

The Unbound Collection by Hyatt accounts for the rest of the announcement. Impression Isla Mujeres transitions into the collection on 2 November as an adults-only, all-inclusive resort with suite-led accommodations and butler service. Further north, The Clayfield, a wine-country retreat in Niagara-on-the-Lake, Ontario, also joins the collection. Hyatt adds that the brand will launch an experiences initiative covering private culinary and wine experiences and behind-the-scenes access to local culture, artists and makers.
For planning purposes, the properties fall into two groups. Park Hyatt Cabo del Sol and Alila Mayakoba are open now, and Impression Isla Mujeres carries The Unbound Collection name from 2 November. The two Park Hyatt openings still to come are given as expected windows, the end of 2026 for Riviera Maya and spring 2027 for Mexico City Polanco, so travellers building a trip around either would be wise to keep dates flexible until Hyatt confirms them. Those who prefer certainty can begin with Cabo del Sol or Mayakoba and add the capital once Polanco is welcoming guests.
